Grapes are sourced mostly from old vineyards more than 50 years old. Their main origin is Megalochori, Akrotiri and Pyrgos and the yield is less than 35 hl/ha.

Wine making

Classic white vinification. The free-run juice ferments in stainless steel tanks under controlled temperatures and matures with fine lees for at least 5 months.

Tasting notes

Aromas of citrus, lemon, pear and peach accompany the typical saltiness and minerality of Assyrtiko. Full body with high acidity and long aftertaste.

Wine making

Fermentation in stainless steel tanks under controlled temperatures. Use of wild yeasts in order to express the varietal characteristics. Long fermentation for 2 months and maturation with total lees for 6-8 months.

Aromas of stone fruits and yeast accompany the typical saltiness and minerality of Assyrtiko. Full body, creamy textured with high acidity and long aftertaste.

Vineyard

Assyrtiko that is used for Nykteri comes from our vineyards of Megalochori. The age of the vines is over 50 years old and the yield does not exceed 35hl/ha. Use of overriped grapes harvested at the end of August.

Wine making

Fermentation in stainless steel tanks under controlled temperatures. The wine is lead into barrels to finish the fermentation. Then it matures with total lees for 6-8 months. Barrels of French oak, light and medium toasted with a small percentage of new barrel are used.

Tasting notes

The oxidative ageing phenomenon that takes place, gives Nykteri a particular character. Complex nose with aromas of ripe citrus, nuts, honey, vanilla and the typical minerality of Assyrtiko. Concentrated body with high alcohol (14%), crispy acidity and long aftertaste.

Vineyard

Katsano and Gaidouria are two very rare local varieties, covering less than the 1% of Santorini’s vineyard. The grapes are sourced from selected estate owned vineyards at Megalochori and Akrotiri. The vines are older than 30 years old.

Wine making

Pre-fermentation cold soak for 4-6 hours followed by classic white vinification. Fermentation in stainless steel tanks under controlled temperatures and maturation with the lees for at least 5 months.

Tasting notes

Delicate aromas of white flowers, stone fruits such as peach and tropical fruits such as pineapple accompany the refreshing taste of this wine. Mineral aromas are expressed through the ageing of this wine. Elegant on the palate with crispy acidity and pleasant aftertaste.

Food Pairings

Salads, seafood, fish, pasta with mild sauces.

Vineyard

Aidani is the second most known variety of the island. The Aidani grapes that are used for our wine come from vineyards of Megalochori. The age of the vines is over 50 years old and the yield does not exceed 400kg grapes per acre.

Wine making

Pre-fermentation cold soak for 3-5 hours, followed by classic white vinification. Fermentation in stainless steel tanks under controlled temperatures and maturation with the lees for at least 4 months.

Tasting notes

Floral aromas of jasmine and lemon blossom accompany the fruity character , such as green apple and pear. Light bodied wine with medium acidity and medium aftertaste.

Vegetables, salads and small fish.
